EAT THIS: THE ROLLIE AT LG MEATS CAPITOLA

Nothing could be simpler than a sandwich, right? Two pieces of bread, a little sauce, some filling, and boom, there’s lunch. But I’ve discovered in my travels and on this beat that good sandwiches can be surprisingly hard to find. As it turns out, there’s a lot that can go wrong, from underseasoned ingredients and bad bread, to weird, unappetizing combinations and poor structure. How the filling is layered is critical; there’s nothing worse than biting into a sandwich and watching everything in the middle slide out the back and into your lap.
But when it all comes together? Oh, it’s a beautiful moment.
My newest sandwich obsession is a tri-tip sandwich called the Rollie at LG Meats Capitola, a new satellite location for the historic family-owned butcher shop Los Gatos Meats & Smokehouse based over the hill. The tri-tip is smoky, tender and flavorful, and it’s layered with sweet barbecue sauce, crunchy veggies and pepperoncinis on fresh baked bread. It might be simple, but simple things are rarely easy.
